At Modern Menu Studio, we believe the best plant-based menus do not feel separate from the restaurant’s identity. They feel naturally integrated into the guest experience from the very beginning.

That philosophy guided our recent menu evolution project with Harbor Stone Pizza — a modern New York-inspired pizza shop focused on quality ingredients, artisan dough, and bold specialty pies.

The challenge was clear:

Expand plant-based options without disrupting kitchen workflow, slowing service, or creating a separate vegan menu.

Instead of overcomplicating the operation, we designed a system that allows any specialty pie to be made vegan using simple modifier-based substitutions.

Operational Considerations

The most important part of this project was execution.

Plant-based integration only works long-term if:

To support this, we implemented a simplified POS modifier structure:

  • Sub Vegan Cheese

  • Sub Vegan Pepperoni

  • Sub Vegan Sausage

  • Sub Vegan Chicken

This eliminated unnecessary menu clutter while giving guests maximum flexibility.
